While Mahi Mahi are beautiful fish of the deep sea and they are also a delicious dish when prepared right. Below, you’ll learn about a Peruvian-Style Mahi Mahi recipe that is both easy to make and a delight to eat.

1.) Take filets out of fridge and let sit for 20 min
2.) Cut 1 red onion into large wedges
3.) Cut 2 large tomatoes in half and de-seed them
4.) Discard the seeds and cut tomatoes into large wedges
5.) Crush 2 cloves of garlic in a garlic press
6.) Preheat a large pan over medium heat
7.) Season filets with pepper and salt, then cover with flour
8.) Add avocado oil to pan and cook filets
9.) Remove filets from pan
10.) Add onions to the pan and cook for a few minutes
11.) Add 2 TBSP of aji amarillo and garlic to pan and cook for 2 minutes
12.) Add tomatoes and 1/4 cup of fish broth and simmer for 2 minutes
13.) Add a splash of white wine vinegar and stir
14.) Serve with sauce over the filets
As mentioned in the video it may be hard to find aji amarillo paste in North America, so consider swapping it out for a chili paste. Either way, your dinner guests will simply love the Mahi Mahi.
