Fish tacos evoke memories of sunny beach days and carefree summer vibes. Now, you can recreate that experience at home with this easy and delicious recipe. In just over 30 minutes, you’ll have flavorful and flaky fish tacos that are perfect for any summer dinner.
Ingredients:
CORN SLAW
- 1/4 cup mayonnaise
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon honey
- 2 cups shredded purple cabbage
- 1 cup corn kernels
- 1 jalapeño, finely chopped
- Kosher salt
- Freshly ground black pepper
TACOS
- 3 tablespoons extra-virgin olive oil
- Juice of 1 lime
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1 1/2 pounds cod (or other flaky white fish)
- 2 teaspoons vegetable oil
- Kosher salt
- Freshly ground black pepper
- 8 corn tortillas, toasted
- 1 avocado, finely chopped
- Lime wedges and sour cream, for serving
Instructions:
CORN SLAW
- In a large bowl, whisk together mayonnaise, lime juice, cilantro, and honey.
- Stir in the shredded purple cabbage, corn, and jalapeño.
- Season the mixture with kosher salt and freshly ground black pepper.
- Cover and refrigerate until ready to serve.
TACOS
- In a medium shallow bowl, whisk together olive oil, lime juice, paprika, chili powder, cayenne, and cumin.
- Add the cod to the bowl and toss until it’s coated with the marinade. Let it marinate for 15 minutes.
- In a large nonstick skillet over medium-high heat, heat vegetable oil.
- Remove the cod from the marinade and season both sides with salt and black pepper.
- Arrange the fish in the skillet, flesh side down. Cook for 3 to 5 minutes per side, until the fish is opaque and cooked through.
- Let the fish rest for 5 minutes before flaking it with a fork.
- Top the toasted corn tortillas with the flaked fish, corn slaw, and chopped avocado.
- Squeeze lime juice over the tacos and drizzle with sour cream.
