Quick and Easy Parmesan Crumbed Fish

Ingredients:

  • 2 firm white fish fillets (about 5 oz / 150g each), skin off, at room temperature
  • 2 tbsp Dijon mustard (or mayonnaise)
  • Olive oil spray
  • Salt and pepper

For the Crumb:

  • 1/2 cup panko breadcrumbs
  • 1 tbsp parsley, finely chopped
  • 1/3 cup (30g) Parmesan cheese, finely grated
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Pinch of salt

Instructions:

  1. Prep the Crumb: Combine all crumb ingredients and mix well.
  2. Prep the Fish: Season both sides of the fish with salt and pepper. Spread Dijon mustard on the top side of each fillet.
  3. Crumb the Fish: Press the mustard side of the fish into the crumb mixture, ensuring it sticks well. Spray with olive oil for a golden crust.
  4. Cook the Fish:
    • Grill/Broil: Preheat your grill/broiler on high. Place the fish in a preheated skillet, then transfer to the grill/broiler for 5-6 minutes, or until the crumb is golden and the fish is cooked through.
    • Oven: Bake at 220°C/425°F for 10-12 minutes, then broil for a few minutes to crisp the crumb.
