This is the method for frying fish:
1.) Remove the crust and dice bread into crumbs
2.) Cut 1lb of boneless filets into large chunks
3.) Season filets with salt, pepper, and 1//4 cup of white wine
4.) Mix and coat the filets evenly
5.) Take chunks of fish and coat with corn starch, then egg, then breadcrumbs
6.) Cook in a pan of cooking oil until golden brown
Recipe for the tartar sauce:
In a bowl combine 1/8 cup of diced onion, 1/8 cup of diced pickle, 1 teaspoon of diced parsley, 2 tablespoons of white vinegar, a pinch of ground rosemary, 1 teaspoon of sugar, pinch of salt, pinch of black pepper, lemon juice, and 1 diced hardboiled egg, 1/2 cups of mayonnaise
