1 1/4 pounds dry sea scallops (approximately 16)
2 teaspoons unsalted butter
2 teaspoons olive oil
Freshly ground black pepper
Heat butter and olive oil over medium heat in large sauce pan
Dry scallops with a paper towel
Season with a bit of salt and pepper
Remove muscle from scallops
Check pan and make sure to bubble out all the water in the butter
Once bubbling stops look for a bit of smoke it’s time to add the scallops
Put scallops in the pan, allowing for a bit of space between each one
Cook for 1.5 minutes and flip in same order you placed them in the pan
Cook for another 1.5 minutes
