Quick and Delicious Oven-Baked Trout in 20 Minutes

  • Olive oil
  • 2 small rainbow trout, cleaned and butterflied (halves still attached), about 1 pound
  • 1 lemon, sliced
  • 4 fresh parsley or dill sprigs
  • Salt and freshly ground black pepper


  1. Prepare the Trout:
    • Preheat the oven to 400°F (200°C). Cut two sheets of heavy-duty aluminum foil, making them larger than the fish.
  2. Assemble the Packets:
    • Place the butterflied trout, skin side down, on each foil sheet. Lightly brush both sides with olive oil. Season the inside and outside of the fish with salt and pepper.
    • Arrange two parsley or dill sprigs and two lemon slices down the center of each trout.
  3. Create the Packets:
    • Fold the foil over the fish, grabbing the edges and crimping them together to seal the packet.
